A native of England, Chef Day is our go-to cake designer for brides. His pastry designs have been commissioned by celebrities, from Eric Clapton and Grace Jones to Brooke Shields and Susan Lucci. Among his many notable pastry accomplishments are constructing a 22-foot Eiffel Tower cake and creating a custom cake for the retiring CEO of Condé Nast publications which featured 25 edible magazine "covers" in chocolate frames, which he flew to the private island party location.

The range of choices is virtually unlimited. Choose from traditional white, rich chocolate, marble, red velvet, lemon or key lime. Cakes may be filled with French pastry cream, with mousseline of white chocolate, or with pastry cream flavored with premium liqueurs and spirits. Layers of fresh fruit may be added for a burst of seasonal freshness or chopped candies can be used to enhance the taste. Icing choices include Tahitian vanilla, Swiss chocolate or a myriad of special flavors.
Hand-applied scrollwork and filigree, sculpted flowers, "ropes" and "tassels" of fondant or icing, "ribbons" crafted into the sides of cake layers, non-pareil "pearls," hand-painted butterflies, and gold, silver, satin or airbrush frosting finishes all contribute to the custom cake design.
